The loss of genetic diversity and traditional farming knowledge is very evident in modern chicken production.
The average employee in Australia's meat chicken industry, has no understanding of the normal behaviour of slow growing chickens in a free range environment. Sommerlad farmers have an important role as keepers of this traditional knowledge.
You may sometimes notice differences in Sommerlad farmers' table birds. The obvious differences are influenced by the genetic diversity in Sommerlad Poultry's varied strains of chickens. The subtle differences are influenced by "terroir", i.e. the farmer's climate, soil type, native pasture species, as well as their locally available feed sources, and processing options. These differences are something to be celebrated, as they represent artisan chicken farming - the very opposite of factory farming. Retail price also varies, depending on factors like the farmer's cost of feed, processing and distribution.
