Keepers of Traditional Farming Knowledge and Genetic Diversity

The loss of traditional farming knowledge and genetic diversity is dramatically demonstrated in modern chicken farming. Today, the average employee in Australia's chicken meat industry has only ever managed high-performance broilers, and has no understanding of the normal behaviour of slower growing heritage chickens. The practice of integrating chickens into a 'whole-farm' plan, by using mobile shelters to renovate land and maintain the flock's health, is considered unviable for large-scale production, and hands-on chicken farming has been replaced by the computer and environmental control systems. Sommerlad farmers have an important role as keepers of genetic diversity and traditional chicken farming knowledge.

Tastes of the Earth

As well as genetic diversity, you will also notice subtle differences in each Sommerlad farmer's finished table birds influenced by their "terroir" - such as the farmer's climate, soil type and native pasture species. Differences are also influenced by their locally available feed sources, and processing options. These differences are something to be celebrated, as they represent artisan chicken farming, which results in a rich and diverse culinary experience. This is the very opposite of modern chicken farming, which results in generic chicken produced to a price.

Retail price also varies, depending on factors like the farmer's cost of feed, processing and distribution.
